Sriracha BBQ Chicken Cast Iron Pizza
Ingredients:
Frozen pizza dough, check the freezer section on your local grocery store.
Mozzarella cheese
Olive oil
Vick's garlic fix custom blend from The Spice & Tea Exchange
Sriracha BBQ sauce (or any sauce, this is just what I used for this particular pizza. You can find it at Trader Joes.)
Carolina BBQ custom blend from The Spice & Tea Exchange
Cilantro
Bacon
Sriracha
Pickled red onions (recipe below)
Directions:
Preheat over to 475, and preheat your 12" cast iron skillet on the stove.
Meanwhile, roll or stretch your pizza dough into a circle that will fit into your skillet.
Drizzle some olive oil into the pan and then carefully transfer the dough to the skillet, pressing the dough up on the edges.
Brush with olive oil and sprinkle with Vick's Garlic Fix, and then brush on your BBQ sauce. While the dough is searing, dress your pizza.
I added mozzarella cheese, chicken I marinated in our Carolina BBQ custom blend (and cooked ahead), and bacon (also cooked earlier).
Bake for 14 minutes.
Drizzle with Sriracha sauce, add pickled red onions and cilantro.
Pickled red onions are one of my favorite things to keep in my fridge. All you need is sugar, apple cider vinegar, and red onions.
The rule is equal parts apple cider vinegar to sugar. Cook until the sugar is melted, add your julienned onions, take off heat, let cool and refrigerate. I think they are good on everything!
