BBQ Baked Potato Fries

 Loaded with spiced barbecue flavor, BBQ Baked Potato Fries & Tuscan Tomato Dipping Sauce are the perfect accompaniment for burger sliders, hot dogs, brats, and more!

Ingredients
2 Tbsp. Organic Extra Virgin Olive Oil
3 tsp. Smoked BBQ Rub
2 Tbsp. Honey - Granulated
1 ½ Tbsp. Tuscany Spice Blend
2 Tbsp. Organic Extra Virgin Olive Oil
3 tsp. Smoked BBQ Rub
2 Tbsp. Honey - Granulated
1 ½ Tbsp. Tuscany Spice Blend
6 medium potatoes, peeled, and cut into ¼” matchsticks
3” long 1 lb tomatoes, peeled, cored, and diced or 1 (16 oz.) canned tomato puree
2 Tbsp. white wine vinegar
1 Tbsp. red onion, finely chopped

To prepare fries:

PREHEAT oven to 400°F.
LINE a rimmed baking sheet with aluminum foil and spray with non-stick cooking spray.

COMBINE potatoes with Organic Extra Virgin Olive Oil and Smoked BBQ Rub in a medium bowl and toss to thoroughly coat.

TRANSFER to prepared baking sheet and spread potatoes evenly.

BAKE in oven 25-30 mins. Season with additional Smoked BBQ Rub, if desired.

SERVE on a serving platter with Tuscan Tomato dipping sauce on the side.

To prepare dipping sauce:

PUREE tomatoes, vinegar, onion, Honey - Granulated, and Tuscany Spice Blend in a blender or food processor.

POUR into a saucepan over medium heat and cook 5-7 mins. until warmed through.

TRANSFER sauce to a bowl and chill in the refrigerator, 30 mins.

Cheesy Asparagus Fries
Ingredients
2 Tbsp. Popcorn Seasoning Spice Blend (optional)
2 Tbsp. Vik's Garlic Fix!
3/4 cup panko breadcrumbs
1/3 cup grated Parmesan cheese
1 lb asparagus, trimmed
½ cup all-purpose flour
3 large eggs, beaten
8 oz. cream cheese (optional)

PREHEAT oven to 425°F. Cover a large baking sheet with foil and coat with non-stick cooking spray.

COMBINE Panko, Parmesan cheese, and Popcorn Seasoning Spice Blend in a large bowl and mix.

DREDGE the asparagus in flour.
DIP the asparagus into the beaten eggs and then coat the asparagus in the Panko mixture. Place onto baking sheet.

BAKE for 11- 13 mins. or until crispy.
Optional: Serve with cream cheese mixed with Vik's Garlic Fix!
